Raw food Chia seeds
The Aztecs used to appreciate their invigorating
effects! From Mexico. The chia is a plant which
originates from Mexico and used to be cultivated by the Aztecs between the 14th
and 16th centuries. Today chia seeds are grown commercially in many countries of
South America, unlike ours which come from small, sustainably managed fields
where they are harvested by hand by the rural population. As long ago as the
time of the Aztecs, chia seeds were valued as a basic foodstuff and a great
supplier of energy. Chia seeds are rich in omega-3 fatty acids in perfect
balance with omega-6 fatty acids. They promote digestion and are good for
satisfying hunger because they supply the body with lasting energy. Chia seeds
contain high-grade proteins, vitamins, antioxidants and minerals.
Recommended intake: 2 tablespoons of chia seeds in salads, soups, dips or
smoothies for adults per day. The seeds are also ideal in the form of
chia-almond milk or for “baking” crackers. Chia seeds can also be used in all
raw food recipes as a substitute for nuts. Give it a try!
Legal note: The European Food Safety Authority gave approval in November 2009
for chia seeds to be used in bread products subject to a maximum content of 5%
(Official Journal of the EU No. L 294 dated 11 November 2009, pp 12 and 14).
According to a statement by the EFSA*, the use of chia seeds and ground chia
seeds in bread products is unlikely to be harmful to health. *The European
